Coconut ,Cacao & Vanilla Muesli
A super easy recipe ,sugar free ,gluten free toasted coconut ,cacao and vanilla muesli.Perfect for enjoying on top of yoghurt or smoothies.
I never leave my house with an empty tank.This coconut ,cacao and vanilla muesli is perfect to start the day on the right foot.There are so many benefits in the coconut meat and nuts as magnesium,vitamin c,anti bacteria ,full of enzymes and so much more…Breakfast foods are good sources of important nutrients,so i definitely recommend you to try these recipe,it is actually one of my favourite because it is super easy,tasty and healthy.
Coconut,Cacao & Vanilla Muesli
- 2 Vanilla beans
- 2 1/2 cups (125g) Flaked Coconut
- 1/2cups (80g) Natural almonds,chopped coarsely
- 1/2cups (80g) Brazil nuts,chopped coarsely
- 1/2 cup (60g) Pecans,chopped coarsely
- 1/4 cup (35g) Sunflower seed kernels
- 1/2 cup (100g) Virgin coconut oil,melted
- 2 tbsp Honey
- 1/2 teaspoon Sea salt
- Fresh Cacao nibs,chopped coarsely
Preheat oven to 160C/325F.Grease and line two large oven trays with baking paper.
Split vanilla beans in half lengthways:using the tip of a small knife,scrape out seeds.Place seeds and pods in a large bowl with remaining ingredients;stir to combine.Spread mixture evenly between trays.
Bake muesli for 20 minutes,stirring occasionally to break into clumps,or until lightly golden.Cool.Add the cacao nibs ,you can add as much as you want.Enjoy
